The Westin Mumbai Powai Lake has announced the appointment of Chef Balvinder Lubana as its new Executive Chef. In his expanded role, Chef Balvinder will oversee all culinary operations across The Westin Mumbai Powai Lake and Lakeside Chalet, Marriott Executive Apartments, Mumbai, strengthening the hotel’s focus on elevated dining experiences, operational consistency, and people-led culinary leadership.

Role and responsibilities

With over 16 years of experience in luxury hospitality, Chef Balvinder brings deep expertise in culinary operations, large-scale event execution, and team development. He will lead the property’s complete food and beverage portfolio, including signature restaurants, banquets, in-room dining, and destination-led events, aligning with the Westin brand’s emphasis on wellness, quality, and guest-centric experiences.

Leadership philosophy and culinary approach

Chef Balvinder is known for a leadership style rooted in consistency, strong systems, and empowered teams. His philosophy focuses on balancing creativity with disciplined execution, ensuring long-term guest trust and operational excellence. A strong advocate of mentoring young culinary talent, he believes in leading from the front while fostering innovation, accountability, and respect within kitchen teams.

Previous experience and career highlights

Prior to joining The Westin Mumbai Powai Lake, Chef Balvinder served as Executive Chef at Goa Marriott Resort & Spa, where he led culinary operations for a 190-key flagship resort, multiple dining outlets, banquets, destination weddings, and a successful food truck concept.

His professional milestones include membership on the Marriott APEC Culinary Advisory Board, leading multi-hotel culinary teams, launching Marriott Bonvoy on Wheels, and contributing to sustainability initiatives under the Marriott Environment & Sustainability Hub (MESH). He has also been recognised for driving high guest satisfaction scores across South Asia.
