Kimikai, Umami House is built around the narrative of a travelling spice merchant who journeyed across Japan, China, Korea, Thailand, Vietnam, and India, gathering flavours, techniques, and cultural influences. This storytelling-led approach shapes the restaurant’s identity, translating diverse Asian culinary traditions into a cohesive and contemporary dining experience.
Interiors inspired by heritage and intrigue
The design language reflects a dual personality—refined yet mysterious. Drawing inspiration from historic Asian trading houses, the space features warm wood finishes, layered textures, sculptural shelving, and curated artefacts. The restrained palette allows craftsmanship and materiality to stand out, creating an environment that feels both storied and modern.
A collaborative vision by hospitality entrepreneurs
Kimikai is the result of a collective vision by Chef Ruhani Singh, Rakshay Dhaliwal, Samarthya Bhargava, and Akshay Khurana. Each stakeholder contributes to different aspects of the concept—from culinary storytelling and bar innovation to brand narrative and overall guest experience—ensuring a unified and detail-oriented execution.

The beverage programme mirrors the restaurant’s narrative, drawing inspiration from Asia’s historic trade routes. Developed in collaboration with Pass Code Hospitality, the cocktail menu integrates tropical fruits, spices, botanicals, and fermented elements.
Ingredients such as yuzu, pandan, jaggery, and kewra are used to create layered, globally influenced drinks, combining technical precision with storytelling.
