Holiday Inn Bengaluru Racecourse has officially relaunched its speciality restaurant, Glass Kitchen & Bar, unveiling a refreshed culinary direction inspired by the rich and diverse flavours of India’s southern coastline. The relaunch introduces a refined dining concept that blends regional authenticity with contemporary presentation, positioning the restaurant as a destination for modern coastal cuisine in Bengaluru.


A new coastal culinary narrative

The redesigned menu offers a contemporary interpretation of coastal gastronomy, drawing from traditional cooking techniques, slow-food practices, and seasonal produce. Influences from India’s coastal regions are thoughtfully woven into dishes that balance nostalgia with innovation, delivering an experience that is both rooted in heritage and aligned with evolving dining preferences.

Signature elements include curated sharing platters, regional classics, and concept-led sections that celebrate home-style flavours through a modern lens.


Leadership insights

Commenting on the relaunch, Shiv Bose, General Manager, said the new concept, titled A Coast Apart, gives Glass Kitchen & Bar a definitive culinary identity tailored to today’s discerning diners. He highlighted the balance between innovation and familiarity, supported by a cohesive culinary narrative led by the hotel’s culinary team.

Ajit Tiwari, Executive Chef, added that the menu focuses on layered flavours and thoughtful contrasts, featuring regional favourites such as Lobster Mappas, Meen Pollichathu, Kuttu Paratha, and Gongura Mamsam, designed to create an immersive coastal dining experience.


Beverage programme and overall experience

Complementing the food menu is an inventive beverage programme curated by Kuldeep Bhure, Food & Beverage Manager. The newly introduced cocktail selection, titled Madya Mix, features drinks inspired by local and regional influences, crafted to pair seamlessly with the coastal flavours.

With service across lunch and dinner, the relaunch reinforces Glass Kitchen & Bar’s position as a contemporary dining destination within Bengaluru’s hospitality landscape.
